This recipe is very simple, all you need are 7 easily accessible ingredients and a pressure cooker. It will only take about 25 minutes to complete and serve this dessert to your family. Easy? YES!
Papaya Snow Fungus Sweet Dessert Soup (Tong Sui)

- Pressure Cooker
Ingredients
- 1 snow fungus unbleached
- 150 g papaya
- 12 red dates pitted
- 50 g dried longan
- 50 g rock sugar
- 2 L water
- 4-5 pandan leaves
Instructions
- Soak one whole snow fungus in a bowl of water until it expands to double of its size.
- Soak red dates and goji berries.
- Discard soaking water for red dates and goji berries.
- Change soaking water for snow fungus.
- Add 2 litre water into the pot.
- Add red dates and goji berries.
- Add 50g dried longan.
- Throw in knotted pandan leaves.
- Place the pressure cooker lid on.
- Select 'SOUP' function for 20 minutes.
- Meanwhile, cut snow fungus into smaller pieces.
- Drain the soaking water.
- Once the 'SOUP' function is done, open the lid and add snow fungus and rock sugar.
- Close the lid and select 'MANUAL' for 5 minutes.
- Once done, remove pandan leaves.
- Serve hot or chilled.
