Papaya Snow Fungus Sweet Dessert Soup (Tong Sui)

Ingredients
  

  • 1 snow fungus unbleached
  • 150 g papaya
  • 12 red dates pitted
  • 50 g dried longan
  • 50 g rock sugar
  • 2 L water
  • 4-5 pandan leaves

Instructions
 

  • Soak one whole snow fungus in a bowl of water until it expands to double of its size.
  • Soak red dates and goji berries.
  • Discard soaking water for red dates and goji berries.
  • Change soaking water for snow fungus.
  • Add 2 litre water into the pot.
  • Add red dates and goji berries.
  • Add 50g dried longan.
  • Throw in knotted pandan leaves.
  • Place the pressure cooker lid on.
  • Select 'SOUP' function for 20 minutes.
  • Meanwhile, cut snow fungus into smaller pieces.
  • Drain the soaking water.
  • Once the 'SOUP' function is done, open the lid and add snow fungus and rock sugar.
  • Close the lid and select 'MANUAL' for 5 minutes.
  • Once done, remove pandan leaves.
  • Serve hot or chilled.
