Soak one whole snow fungus in a bowl of water until it expands to double of its size.
Soak red dates and goji berries.
Discard soaking water for red dates and goji berries.
Change soaking water for snow fungus.
Add 2 litre water into the pot.
Add red dates and goji berries.
Add 50g dried longan.
Throw in knotted pandan leaves.
Place the pressure cooker lid on.
Select 'SOUP' function for 20 minutes.
Meanwhile, cut snow fungus into smaller pieces.
Drain the soaking water.
Once the 'SOUP' function is done, open the lid and add snow fungus and rock sugar.
Close the lid and select 'MANUAL' for 5 minutes.
Once done, remove pandan leaves.
Serve hot or chilled.
