Bananas make an excellent snack food. They are a great addition to yogurt, cereals and even smoothies. Their versatility makes them easy to add into baking and cooking recipes.

Lepat Pisang Recipe

Today, I’m going to share how to make this extremely simple Lepat Pisang (steamed banana packets), the traditional way with coconut filling.

There are many versions to this kuih, some people make it without the coconut filling, others prefer to add coconut milk, while there are some who actually add rice flour into the batter. As for me, I keep it simple just like the good old days.

This delight is a healthy snack as it is steamed, not deep-fried. Wrapping it in banana leaves enhances the already aromatic banana kuih.

Equipment

  • Steamer

Ingredients

Batter

  • 3 cups bananas (500g) (mashed)
  • 1 cup plain flour (85g)
  • 1/2 cup sugar (60g)
  • 1 pinch salt

Filling

  • 2 cups shredded coconut (100g) white part only
  • 1/4 tsp salt

Wrap

  • Blanched banana leaves

Instructions

WRAP

  • Blanch clean banana leaves for several minutes.
  • The leaves are ready when you can bend them without breaking.
  • Cut into desired size and set aside.

BATTER

  • Peel the banana skin.
  • Mash the bananas.
  • We need 3 cups of mashed bananas.
  • Add 1/2 cup sugar.
  • Add a pinch of salt.
  • Mix well.
  • Add 1 cup of plain flour.
  • Mix well.

FILLING

  • To make the filling, add a little salt into the grated coconut and mix.

CONSTRUCTING THE LEPAT PISANG

  • Scoop 1 tablespoon of batter onto a piece of banana leaf.
  • Add a little grated coconut as filling and cover with another scoop of banana batter.
  • Fold the banana leaf to wrap.
  • Steam for 20 minutes.
The thing about getting the little one to help in the kitchen is he will eat some bananas before mashing them, so I have to make sure we have extra bananas.
