Rendang Ayam Kampung with Daun Puding

Whether or not it is during the Hari Raya period, matters not when it comes to this exquisite dish! Anytime is the best time for us to enjoy some Rendang Ayam, or chicken rendang, at home! As we all know, chicken rendang is an evergreen dish in most of our hearts, if not all.

Of course, my family and I are no different. We really love it. Especially when it’s Rendang Ayam Kampung with Daun Puding! On any given day, I can always hear my sons yelling for this dish. Oh well, looks like I’ll just have to cook it for these “kesayangans” of mine. I can’t really blame them though because it’s really delicious and healthy!

Are some of you questioning the ‘healthy’ part? Some may not deem rendang as a healthy dish due to the possibly excessive coconut milk consumption. But here’s the good news: You don’t have to omit rendang from your diets completely! Mummies, you may actually either reduce the amount, or use a substitute for the coconut milk. Say, yoghurt, fresh milk or soy milk.

However, this dish also has the added ingredient of daun puding (Grapthophyllum Hortense), which has plenty of nutritional benefits. Hence, it may even balance out the coconut milk! Before we start, are you familiar with daun puding and its benefits?

Rendang Ayam Kampung with Daun Puding

Ingredients

  • 1/2 ayam kampung
  • 1 1/2 small box of coconut milk Yellow coloured box
  • 6 stalks of dried chilies *
  • 6 stalks of chilies *
  • 1 onion *
  • 3 cloves of garlic *
  • 2 inches ginger *
  • 2 inches turmeric *
  • 2 inches galangal *
  • 1 tbsp oil
  • 1 pcs asam gelugur
  • 1 pcs turmeric leaf
  • 2 stalks of lemongrass
  • daun puding
  • 2 tbsp kerisik

Instructions

  • Ground the ingredients that are marked. (*)
  • Heat oil and sauté until fragrant.
  • Add lemongrass, and then add chicken.
  • Mix until the spices are well blended with the fresh chicken and then add a little water.
  • Cook until the meat is tender, the kampung chicken can be quite hard, so you can add a little more water to it.
  • Add 1 1/2 small boxes of coconut milk and stir well.
  • Then add sugar, salt, asam keping and turmeric leaves.
  • Add the puding leaves.
  • After that, you can add in the kerisik and mix well.
  • Cook until the rendang gravy is thick enough for your taste, and it's ready!
